Quesadillas

These are so easy to make and you can put just about anything in them. Most people use sour cream with these or in Mexico a product called Crema Fresca* but we had Lebni on hand so we tried that and it went very well. A couple of shots of Melinda's and some piquante sauce made it that much better.
* I think that's right.
 
Ingredients:Cut up cooked chicken, Jack cheese, diced jalapenos and chopped tomato. I seasoned the tomato with lime juice, hot sauce, salt and pepper ahead of time and used a tiny bit of butter in the frying pan.

Zeitgeist Badge? Badge Zeitgeist?

Looks like the badge is going to have top position. It's finally showing food pics from Flickr. That means the Zeitgeist goes lower on the page. I may even get rid of it.

We're not making these I just posted the picture because I saw it and warm scallion pancakes are such a good thing. We get ours from Village Sushi in Roslindale.

The Cheese Mistress Will Instruct You

"Basically, Lebni is yogurt that has either been hung up in a muslin cloth to drain or that has had lemon juice added to it to firm it up."
We got some today* and didn't quite know what it was or what to do with it. Olive oil and pita bread are basically what you need. And a little dried mint if you have it. Kalamata olives on the side are good too. We get something similar from Cafe Apollonia and I think it comes with cucumbers and sliced red peppers. Even better, they warm their pita in a lightly oiled or buttered pan before serving.

What kind of mushrooms!?!


The menu for functions at Venezia sounds good but they need to clean up a typo in their menu. Chicken Shitake ~ Boneless, Skinless Chicken Breast pan seared and sauteed with a Garlicky-lemon Shitake Mushroom Sauce. Try a double i. It doesn't sound too appetizing with just one.
I found some unecessary commas too but I don't want to sound picky so I won't say any more.
