I’m Way Behind on Posting – Spicy Stir Fry

A couple of weeks ago I needed to make supper from what I had in the house. I made a stir fry and it came out so well that I’m posting the recipe. All quantities are approximate.

½ Lb. ground pork
1 carrot, chopped small
1 clove garlic, minced
red bell pepper, chopped small – ¼ to 1/3 of a cup
¼ Lb. green beans, in bite size pieces
bamboo shoots, a handful
Slow cooked shiitake mushrooms, 2 or 3 thin sliced
beef broth, 4 to 6 ounces
Sambal Oelek (Chili Paste), 2 Tsps.


Brown the pork over high heat, then add the garlic, mushrooms, carrot, bell pepper and green beans. Stir fry for several minutes then season with salt and pepper and add the chili paste, make sure to mix it in well. Stir fry another minute or two then add the beef broth, thicken with a cornstarch slurry if you like, and simmer until the vegetables are done to your liking. Serve over rice and enjoy.

A couple of notes: Substitute freely, make yourself happy. The recipe for the mushrooms is linked to but regular shiitakes are good too. Chili paste is hot, hot ,hot. If you’ve never had it be careful and use only half. If you like it, load it up. We like it!
