Grilled Red Snapper

We are lucky to have the very good Roslindale Fish nearby and we shop there on a regular basis. The fish is always fresh and frequently different from day to day. I call in the morning 617-327-9487 to see what they have and they will put something aside for pickup that evening. In the spring and summer they had wonderful fresh sardines. Earlier this week it was whole Red Snapper and we broiled it.

Red Snapper
Grilled or Broiled

For 2 whole fish – gutted and scaled

Marinade
Juice of two limes
2 Tbs. vegetable oil
1 Tbs. soy sauce
ginger and garlic, crushed
pinch of sugar
salt and pepper to taste

Sauce
2 -3 Tbs. sesame oil
1 -2 Tbs. soy sauce
2 Tsp. minced ginger
2 -3 whole Chinese dried red peppers, cut into small pieces, discard seeds - substitute freely or omit
2 -3 scallions, chopped, green part only

Pat fish dry and make three or four slashes across each side. Marinate for ten or fifteen minutes on each side then grill or broil for about six minutes on each side or until done. Pour the sauce over the fish as soon as it comes off the heat and serve immediately.
Optional; before marinating put a bit of sliced orange in the cavity of each fish.
